Line a baking sheet with foil. Grease it with olive oil.
Cut the tube of polenta into “fries.” There really isn’t a science to this either- but these pictures should give an idea of the size that I like them.
When you put each fry on the baking sheet, make sure that both sides get coated in olive oil. This will keep them from sticking too much!! Before you put them in the oven, sprinkle with salt, pepper, and parmesan. They will bake for about 20 minutes, but take them out after 10 minutes to flip them.
WARNING: When you flip them, you might have some trouble. Some will stick, you will need to peel some away from the foil… you get the idea. I’m adding this picture into the post just so you don’t feel alone if this happens to you!
While the fries are baking, saute the garlic in olive oil. Add the small can of tomato sauce and simmer until the fries are done. Once the fries are crispy and golden, take them out of the oven and let them cool slightly. Serve with the tomato sauce.
The smaller ones cool faster… go ahead and eat that one right away.
