One of my favorite blogs, A House in the Hillsmade a Raspberry Chia Jam recently that peaked my interest. I’m a big fan of dark cherries (I eat them frozen right out of the bag), so I’ve adjusted the recipe to feature them. I love that a few simple ingredients can make something so great!
1 (generous) cup frozen cherries
1 tbsp agave syrup (or honey)
2 tbsp chia seeds
Combine frozen cherries, agave, and lemon in a pot. Put over low heat and let it slowly melt together.
As the cherries start to soften, smash them down into pieces. Be patient and don’t turn the heat up high! It will get there.
If you can’t break up the skins as much as you’d like with a whisk or fork, transfer the mixture to a food processor for a quick zap. Pour it back into the pan and keep over low heat for a few more minutes.
Once it’s the consistency you like, take it off the heat and add the chia seeds. Stir the mixture, so they are evenly dispersed.
Pour into a jar.
Let it set in the fridge for an hour.
And that’s it!
I’ve been putting it on toast, PB & Js, or mixing it into my greek yogurt.
Don’t know why everyone is fussing about chia seeds? Well, they are rich in Omega-3 Fatty Acids, fiber, antioxidants, and minerals (namely calcium, phosphorus, magnesium, and manganese). In plain terms, they’re good for you.
