A lot of people ask me about meals for one and I usually try to convince them that leftovers are a good thing 😂 But I get it, sometimes you want to cook something for yourself, eat it fresh, and be done. I made this recipe in 2016 (updating it in 2019!), when I was living alone and it was a go-to for me. It’s quick, healthy, and satisfying. What more could you want?
If you are paleo or doing Whole30, you can sub the soy/hoisin sauces for coconut aminos and the flavor is still pretty similar. There are also a bunch of homemade paleo hoisin sauces out there on the internet if you want to get creative!
Also, it makes me laugh that I made this before cauliflower rice was available in almost every grocery store in America. You can always turn a head of cauliflower into “rice” yourself, but it is really nice that we can now pick up a bag from the freezer section and call it a day!
Isn’t that such a gorgeous dinner for one?! Move aside frozen microwave meal. THIS is what we all should be eating.
