I’m Italian, therefore I’m obviously a big fan of Limoncello. I love that it’s refreshing and tart, while still packing a serious punch 😉 I’ve talked about making it over and over again (especially since I started blogging!), but I never got around to it because good Limoncello is supposed to marinade for a minimum of 4 days… some people would say even longer than that. So, when Learn To Cook and I played around with the sous vide method, I got all excited! Check it out!
Using a vegetable peeler, remove peels from the lemon, making sure to get as little pith as possible.
Place lemon peels, water and sugar in a large Ziploc bag. Add in the vodka, and seal the bag, careful to get out the extra air. Mix around the ingredients in the bag.
Place in the water bath and let cook for 3 hours.
When done, strain the vodka into a bottle or container using a fine colander. Refrigerate until cold, about 4 hours. Serve over ice or use in other cocktails. Store in the refrigerator for up to one month.
Mix this into cocktails, stir into desserts (Limoncello frosting? Yum!), or just sip it as is!
I once went to a restaurant that put sugar and espresso grinds along the rim – there are endless possibilities for entertaining!
