Happy Tuesday, everyone! I’m super excited for this post, because it’s a collaboration with the lovely crew over at CorePower Yoga!! That’s right, after sharing my Teacher Training Journey on their site a few months ago, I’m BACK and I’ll be contributing a bunch of fun stuff for you all that combines my love for living well, eating healthy, feeling great, and obviously doin a little yoga 😉
When it came time to brainstorm for this post, we definitely wanted to highlight International Friendship Day (which was Sunday!) in some way… so a dinner party/potluck immediately came to mind for me. Obviously we’re targeting some health conscious readers with this, so I thought – how could I tailor a dinner party/potluck situation specifically to healthy yogis? Umm POWER BOWLS, DUH!

For this one, I started by making some Roasted Spicy Chickpeas. I’m a big texture girl, so these add a really nice crunch to the meal. Plus, they’ve got tons of protein!
Next I spiralized some cucumber and red onions and tossed it in a little lemon. Add fresh tomatoes for plating, too!
Pro tip: it helps to set these “noodles” over a strainer for a bit to let the water drain before serving!
I’m a huge fan of sweet potatoes, so I cubed and roasted some of those too. I especially love when the edges get a little crispy 🙂
Now that you’ve got your veggies done, it’s time for the base and the sauce! I made whole wheat pearl cous cous, but you could also go with brown rice, bulgur, soba noodles – whatever you fancy!
As for the sauce, I copied one of my all time favorite bloggers ever, Pinch of Yum, and made her Magic Green Sauce. Let me tell ya, this stuff really is pretty magical. There’s SO much flavor in this simple concoction – and it’s all fresh, so you don’t even have to feel bad if you pour it alllll over your bowl. Yassss.
Once that’s all done, it’s time to set everything out for our guests and let them assemble!
